Show mom how much she means to you with an insta-worthy homemade meal. These 3-ingredient pancakes — courtesy of Juli Novotny Goddard, our go-to girl for healthy and tasty recipes — are a cinch to make and oh-so-pretty. Pair with a breakfast cocktail of choice and consider Mother’s Day made.
yields about 12 regular-size pancakes
2 super-ripe bananas, peeled
1/3 cup cashew flour
Note: You’ll need oil or butter for greasing the pan and your fresh toppings of choice.
- Add all ingredients to a Vitamix or high-speed blender and blend until completely smooth and no chunks remain.
- Heat a skillet on medium high. Grease the skillet. Slowly pour batter in circles and cook until bottoms are browned. These pancakes are a tad more difficult to flip than the average pancake, but if they’re thoroughly cooked on one side, they should turn pretty easily. Use a spatula to peek underneath before flipping and you should be good.
- Finish pancakes with your favorite topping — like maple syrup or fresh berries. You can also ad protein powder to the batter before cooking for an even heartier pancake.
