This baby is a classic. The original calls for Angostura bitters, but we like to riff using all the amazing new bitters flavors on the market.
Brown sugar cube (or white in a pinch)
Bitters to taste
Add brown sugar cube to glass, fill with champagne. Add bitters and garnish with zest.
The Hemingway (aka Death in the Afternoon)
We love these for fueling our inspiration.
1 ounce absinthe
4 ounces champagne
Pour absinthe into a flute, fill the rest with champagne. Adjust ratios to taste.
